I love this time of year!!

Not just because it’s Valentines day, but because it’s also my birthday, and now it’s also my son’s birthday. All three events within 6 days!! And now nobody remembers my birthday anymore!!!

If you’re looking for a quick healthy snack for the kids (or yourself, let’s get real, mom you’re gunna love these too!!) everyone will love this quick and easy snack you can put together in less than 5 minutes, and no sugary junk marshmallows needed. Only real food ingredients in this recipe. I’m talking, protein, healthy fats and fibre.

If you’re a pregnant or new mom, these treats will also give you extra iron from the tahini and protein from the peanut butter. Make sure to use organic peanut butter to avoid any potential toxins.

Tahini Maple Peanut Butter Rice Crispy Squares

Ingredients

  • 1/4 cup tahini
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup
  • 2 Tbsp coconut oil
  • 1.5 cup each puffed brown rice crisps, and puffed millet.

Instructions

  1. Line an 8x8 casserole dish with parchment paper.
  2. Mix rice crispies and millet together in a bowl.
  3. In a saucepan on the stove, mix together tahnin, peanut butter, maple syrup, and coconut oil heat and stir occasionally until boiling.
  4. Once boiling (when the liquid around the sides of the pot start bubbling) take off heat and pour over the rice and millet mixture.
  5. Mix together, coating the rice and millet mixture well
  6. Press the mixture into the casserole dish and freeze for an hour or so
  7. Once cooled and frozen take out of freezer and cut into squares.
  8. Keep frozen and eat frozen for best taste and for the squares to stick together. (Left at room temperature they will fall apart)
